Vegetarian Sloppy Joe
- Vegetable Oil, 1 TBS
- 1 Medium Onion, chopped (I don't use this because my husband doesn't like onions)
- 1 Green Pepper, chopped
- 3 cups cooked brown rice
- Pinto Beans, 2 cans (15 oz)
- Chili Powder, 1 1/2 TBS
- Hickory Smoked Barbecue Sauce, 3/4 cup (I use closer to a 1 full cup so it isn't dry)
- Heat oil in large skillet over medium-high heat.
- Add onion and green pepper; cook 2 to 3 minutes.
- Add rice, beans, chili powder and barbecue sauce.
- Simmer 10 to 15 minutes, until heated through.
- Serve on buns.
This is delicious. I also like to put a little bit of shredded cheese on it too.
