Vegetarian Sloppy Joe

I found THIS recipe at GROUP RECIPES. It is one of my favorite things to make. I made it for my main dish for our Super Bowl party and a lot of people ended up eating it as a side dish instead. I hope you enjoy.

Vegetarian Sloppy Joe
  • Vegetable Oil, 1 TBS
  • 1 Medium Onion, chopped (I don't use this because my husband doesn't like onions)
  • 1 Green Pepper, chopped
  • 3 cups cooked brown rice
  • Pinto Beans, 2 cans (15 oz)
  • Chili Powder, 1 1/2 TBS
  • Hickory Smoked Barbecue Sauce, 3/4 cup (I use closer to a 1 full cup so it isn't dry)
  1. Heat oil in large skillet over medium-high heat.
  2. Add onion and green pepper; cook 2 to 3 minutes.
  3. Add rice, beans, chili powder and barbecue sauce.
  4. Simmer 10 to 15 minutes, until heated through.
  5. Serve on buns.

This is delicious. I also like to put a little bit of shredded cheese on it too.

Blueberry Oatmeal Squares

I found this recipe from THIS blog and fellow Sister at The Sisterhood.

Blueberry Oatmeal Squares

Dry Ingredients:

  • Oats, 3 cups

  • Cinnamon, 1 TBS

  • Baking Powder, 1 TBS

  • Salt, 1 tsp

  • Truvia, 6 packages (or sweetener of choice)

Wet Ingredients:

  • 6 Bananas Mashed

  • Milk, 1 1/2 cups

  • 3 Eggs

  • Vanilla Extract, 2 tsp

Frozen Blueberries, 2 cups


Instructions

  • Pre-heat oven to 350 degrees.

  • Spray 9x13 pan with cooking spray.

  • Mix dry ingredients in large bowl.

  • Mix wet ingredients in another bowl.

  • Combine them together in large bowl and stir in frozen blueberries.

  • Pour mixture into prepared baking dish.

  • Bake for 1 hour.

I made these delicious bars last night. They smelled heavenly and when I took them out in 1 hour they past the tooth pick test. But then when I cut into them after they cooled they were really, really gooey from the bananas. I think I will either have to bake them longer or puree the bananas so I don't have any chunks.
